The first keto-confectionery in Ukraine: low-calorie business

A newfangled keto diet based on a reduction in carbohydrate intake has begun to gain popularity in Ukraine. The first confectionery Keto Keto is actively working in this direction.

A Keto diet has spread with a growing demand for a healthy lifestyle. It is no secret that a balanced diet is the key to well-being and longevity. The principle of a keto-diet is to eat 70% fat, 20% protein and 10% carbohydrates daily. In this case, the sugar level should be minimal. An organism with this nutrition produces metabolic flexibility - a state of ketosis, when fats, rather than carbohydrates, begin to be processed. It would seem that the task is simple, apart from the fact that sweets with a continuation of the diet will want more.

From concept to recipes

The first in Ukraine, the founder of the keto-confectionery Kiev Maxim Gorin reacted to the need for keto desserts. He shared that he himself switched to a keto diet a couple of years ago. Since then, I have tried many keto recipes. At first he began to cook for friends, and eventually opened a small business for the delivery of keto desserts. The founder himself says that this is not so much a diet as a lifestyle that can be maintained constantly.

“We prepare recipes with a minimum set of carbohydrates. For a long time we selected proportions, experimented until we reached a taste that we liked ourselves, ”says Maxim. As a small business, the founders started 3 years ago, starting with home cooking and several orders for friends. Maxim notes that there were a lot of difficulties - from finding a pastry chef to a so far poor recognition of a keto diet among consumers. Due to the fact that keto was not yet popular in Ukraine, it was almost impossible to find culinary professionals who would be professionally engaged in the kitchen.
On hand played an interest in various new products and wonders in the grocery market. The owners were advised to set up a test batch of desserts at the Street Food Festival. It took no more than a month to develop a brand, a stand and other things. At the same time, they caused considerable interest among visitors.

In sweet plus

Today, the company is actively expanding - it already has its own culinary workshop and has become recognizable in the capital. In particular, word of mouth worked and communication with people at various events. The confectionery has several partner coffee houses and fashionable clothing salons, and negotiations are underway with several other institutions. Desserts can also be ordered with delivery.

At first, the owners of Keto Keto experimented not only with the menu, but also with the business model. At first, they tried to earn money by increasing the number of desserts produced. But since the confectionery was supposed to make a profit, the direction was "taken" to a niche, raising prices. The most expensive products in the line are cakes, including those containing no lactose. Ingredients for desserts are bought in bulk from large retail chains. The products are mainly imported, since many components, such as mascarpone cheese, do not meet the quality and taste categories.

Entrepreneurs are constantly expanding the range, studying the demand for certain types of desserts. Usually this is a weekly menu, including trifles, buns, cupcakes, panakota and tiramisu. There are large orders for the holidays, for example - birthday cakes.

Project Audience

Keto desserts allow you to fully get enough after one piece of cake. Therefore, they are especially popular among girls who follow the figure.

“Our desserts are ideal for people with epilepsy, diabetes, lactose intolerance. The clientele of the company is those who care about their own health. 95% of them are women aged 30+, ”says the owner.

A Keto diet is also suitable for children, especially those with hemoglobin level problems, as well as those who simply want to keep fit. After eating the dessert, insulin does not rise in the blood, since confectioners use erythritol as the main substitute for sugar. It is quite safe and almost identical to sugar in taste.
